I used to like chicken salad, before I became a vegan. Nowadays I eat a lot of chickPEA salad, but this tofu salad is definitely going in my rotation. It's so easy and delicious!

I live in El Paso so I put a Tex/Mex twist on this. After making the salad I warmed a whole wheat tortilla, laid down some spinach, topped with the salad and topped that with salsa. So yummy. Love this recipe because it is very versatile and EASY. Win win...

I really like the layout of the blog with the extra simple posts. Not a lot of reading makes me happy.

Also - I've never considered eating tofu like this and I always cook it - but I am excited to give this a try. Thanks for sharing!!

Looks amazing! How long could I keep this in my fridge?

Marit Tiesema,

Well, this is an old recipe so we do not know. Generally, keep tofu dishes stored in the fridge and check daily. We can not guarantee freshness but we guesstimate 4-5 days. Be sure to smell your dish and you ought to know whether it smells appetizing or not. Also, a quick stir ought to help the presentation!

What a terrific spring/summer recipe. I absolutely love your artistic drawings... so adorable & whimsical. Your "Cracked Cracker Co." cracker box is pretty dang clever. LOL. Thank you so much for sharing vegan delish -- I'll be back soon :-)

First of all, I`d like to say about the idea of a design of your recipe. The infographic is the best way to give the information: easy, shortly and clear. Thanks a lot. I`ll try.))

What brand of crackers did you use for the photo? They look so delicious!

Hi Michelle!

I can't remember what brand of cracker this was, but I believe they are a type of "crispbread".
