I used to like chicken salad, before I became a vegan. Nowadays I eat a lot of chickPEA salad, but this tofu salad is definitely going in my rotation. It's so easy and delicious!
I live in El Paso so I put a Tex/Mex twist on this. After making the salad I warmed a whole wheat tortilla, laid down some spinach, topped with the salad and topped that with salsa. So yummy. Love this recipe because it is very versatile and EASY. Win win...
Well, this is an old recipe so we do not know. Generally, keep tofu dishes stored in the fridge and check daily. We can not guarantee freshness but we guesstimate 4-5 days. Be sure to smell your dish and you ought to know whether it smells appetizing or not. Also, a quick stir ought to help the presentation!
