just made this! it was so delicious! i did everything the same except used cauliflower and broccoli instead of just cauliflower(because i bought a bag of them mixed) and the cabbage had some carrots, and more broccoli shreaded in with it. i kept a bit of the water in the pan from the boiled veggies(mostly because it was hard to pour it all out) and it came out thinner, so i just simmered it for a bit. it doesn't say to top with chives but it looks like that is what was done in the picture, so i did that and it was the cherry on top of the cake! i highly recommend (O:

The potatoes, cabbage, and cauliflower are drained before adding the veggie broth. If the soup is too thick for you, add more veggie broth or water if you are using a very salty broth.
My entire family is trying to go vegetarian and I am trying to go back to being a vegetarian. I am making this soup as I speak. The smell coming from the kitchen is driving me mad. I can't wait to try it. I will be blogging about it here.
Hi Christen. The ingredients don't need to heat long in the pot (Step 4), just long enough to heat. If you like the soup thicker then let it sit longer.
I just made it and as nice as it tastes it's not fantastic. I think I'll tweak it a bit next time I make it. I do love the fact that it is very healthy.
It seemed like it was creating irregular results for those making it. So we went back to the lab, remade it a few more times, and took out the cauliflower from the original recipe.

I made a half batch of this soup today and scarfed it! My belly didn't want the cabbage, which I love, so I just ate the potato, chives and broth I feel so much better now! I didn't drain anything, cooked it all in the (salt-free) broth and added a bit of sea-salt and course black pepper. My daughter got your cookbook, for Christmas, from her awesome husband and it inspired me to check you out. I pinned a few of your recipes last night and will be making them all! Thanks for the simple, delicious and nutritious recipes and for the delightful illustrations. You ROCK!
We don't tend to count calories, which is why it isn't included. However, we did a quick online search and found some very reliable-looking sites that calculate food calories. We will keep your comment in mind, however, and we thank you for the question.
Try using any thick liquid. Alternative milks, like oat, cashew, almond, soy, or hemp. If using rice milk note that it will be watered down. Just pay attention to the consistency of the liquid. If using coconut milk try adding something to round out the flavor, a bit of curry or some paprika.
We used 2 medium-sized Russet potatoes that equaled to about 1 cup chopped per potato. Using anywhere from 1.5 - 2.25 cups of chopped potato should work. Hope this helps!

Thanks for the comment. We changed the recipe because it seemed a lot of people were having issues with it. This is the new-and-improved recipe. However, here's another recipe we wrote, that people seem to like, which has cauliflower in it: Tater Tot Hotdish
Sorry we have updated this recipe a few times. We took out the cauliflower to make it simpler and a bit thinner. There is no use of a blender in the new recipe. The potato should break down slightly while cooking. You can always blend it if you prefer something smoother and add a bit of cooked cauliflower to thicken it and add more nutrition.
