I had been trying to figure out what plantains went best with and by coincidence (or was it?) you guys had posted this. It's absolutely perfect and I never would have thought of it. I'm craving this right now actually. Oh, and given the chance, I'll never eat guac with chips again! Thank you so much!
I never thought of plantain chips with guacamole. Made it last night as a side for the corn salad sandwich and it was very good. The sweetness of the plantain worked really well with the guac. I put a bunch of cilantro and lemon juice in it. I did notice that after baking for 5 minutes on each side, at 400, that they were still very soft and not browned at all. I ended up baking them for nearly 25 minutes. If I make them again, I'll likely up the temp to 450 or 475

Plantains are usually larger and darker than bananas. They are not as sweet as bananas, but either one will work in this recipe.

oh my gosh yum. i noticed plantains at my local grocery recently and i wasn't sure where to get started, but now i know!
