I just made this for dinner. It was a family wide crowd pleaser - and who knew that most name brand puff pastry was vegan? Seriously fast - seriously delicious. Vegan Stoner you have outdone yourself.

I found your cookbook online by accident and am in LOVE!!!!!! Finally a cookbook that is truly simple and good. I have a million vegan cookbooks and even the ones that say "easy" aren't and they often have ingredients that are not easy to find. Your cookbook is the bible in my home now. Any ideas for coconut milk substitute? I'm allergic. :(

A good substitute for coconut milk in this recipe would be any vegan creamer. Also, try using any vegan milk and adding a little extra flour to get a comparable consistency. We hope this helps.

We know of a few brands that make vegan puff pastry dough. If you are having trouble finding one, try looking online or making it from scratch.

I made these over the weekend - super fun and creative idea! Instead of just cumin, I used a tablespoon of red curry paste and I really liked the flavor. Great recipe!
