What is a handful of seitan supposed to mean? I've only either seen seitan packaged as a blob or I make it myself.

Hi Anonymous-

We've seen seitan packaged in sort of a "blob" too, but once you open the package it separates into 1" pieces. If the one you purchase doesn't separate, just chop it into bite-sized pieces and then add two handfuls in Step 2. If the idea of a handful is too vague, just add enough for 2 servings.

Hello- is fresh cooked rice ok? We usually have a big pot of rice or quinoa made every week.

Fresh cooked rice or any other grain works fine. For future reference feel free to substitute fresh cooked grains for any frozen grains and vice versa!
