I made this dish today - figured I'd stop by and tell you! :)
I used a fresh bag of veggies (the kind that come ready to steam; they weren't frozen, just refrigerated). So I had cauliflower, broccoli, and carrots with mine!
Anyway, it turned out GREAT. I'd highly suggest upping the amount of curry powder for those wanting to make this - though, then again, I'm a huge Indian food enthusiast and love curry, so maybe I'm just odd. Haha.
We wanted to get across the idea of using any veggie mix that you could find or had a craving for. If that means using frozen veggies or fresh ones, just use whatever your heart and tummy desire.
Your blog is so unbelievably wonderful! Thank you for showing just how easy (and delicious) a vegan diet can be. I'm making this tonight and taking it to my office potluck tomorrow. I'm an intern right now for Mercy For Animals, and I showed them this blog. They love it!
I made this recipe today...It's amazing!!! I love finding easy to make vegan recipes! I added a lot more curry than the recipe called for and I definitely recommend doing that for extra flavor! I also added tofu and it was wonderful! yum yum
I had a couple of teaspoons of homemade ginger-garlic paste left in the refrigerator, so I added that to the oil before frying the rice. Worked nicely, at least if you like a good ginger flavor (there's ginger in the curry powder, too).
very simple idea, yet I wanted a thick curry running over the rice. So, I boiled water with the rice and veggies in the wok for 10-15 minutes and added in the curry powder. Soft!

This is SOOOO great! I added some siracha and then made an egg over easy placed it on top and mixed it all together. So much munching!!!
