I have never heard of Yucca root before - I'm intrigued. I will be trying this very soon. I don't know how any type of fry could be bad though. =]

You don't have to boil them, but it might change the texture/flavor for the better. Let us know how it works out.

There's Yucca, the green pokey plant that you are thinking of, and then there's Yucca root, which is also called cassava or manioc. They are two completely different plants (from two different families).

Also, yucca/cassava/manioc HAVE to be boiled before cooking a second time (as in making fries) because they're kind of poisonous.

I made these, but I boiled them. I live in costa rica and the locals at work have told me you must boil them! Two reasons, they are toxic and also there is a "spine" in the middle that you should removed and it comes out easy when boiled.I think you can eat it,but its better to remove it.you peel and then boil for about 20 mins and then dry them and slice them into fries.

This is an extremely common food dish in Brazil. It's called mandioca (pronounced man-ji-ya-ka). It's delicious.

I have had it boiled then fried and not boiled then fried.

Boil it every time. It's better.

You can also eat yucca as an add-on for rice called Farofa. It's basically powered dried yucca. It's great on black beans and rice and also a Brazilian staple. http://en.wikipedia.org/wiki/Farofa Very yummy.

I just found your website and love all the recipes i've seen. I was recommended by stumbleupon.com. The recipe that caught my eye was on their email enchilada rolls. It would really be helpful if your recipes had a search or a sidebar listing of all your past foods.

Cassava is known as Yuca, http://en.wikipedia.org/wiki/Cassava. Yucca is the shrub/tree, http://en.wikipedia.org/wiki/Yucca.

These would also be amazing with a veganaise garlic aioli!!! Try it, trust me (def boil ahead of time!)
