I have spent a lovely time around here, I think your blog is simply perfect... love all recipe's illustrations with the ingredients and everything else besides the food itself is pretty original =) Congrats!!!
This recipe didn't work out so well for me. I thought the filling was bland and I had a hard time getting the rice to stick together. Love most of your other stuff. Thanks anyway!
Hi Anonymous — We're sorry this didn't work out so well. We tried making the recipe again to improve it, and we noticed that adding a bit of salt to the rice enhances the flavor quite a bit.
As for the rice not sticking together, did you mix the vinegar in prior to cooking the rice? Rice vinegar is what makes the rice sticky. Also, be sure to use a short grain rice. The shorter the grain the better they will stick.
One cup of dry rice makes about 2 cups when cooked. This comes out to a spoonful of vinegar per cooked cup of rice. Some people like less, some people like more. This is really up to you, but we find this ratio is pretty safe without overwhelming the recipe.
Just for reference, any time we include cooking dry grains in recipes, it is implied that there should be water added. The reason we did not specify the amount is that it varies depending on the type of rice. So please add the amount of water specified on the package you purchased with the rice.
Sushi rice is best if you want it to stick together, but other short grain rice will do. You may have trouble getting them into a round shape that doesn't crumble.
If this happens try cutting the nori sheets into squares and topping with rice and the TVP mixture. Voila! You have small nori wraps!

Put salt on your hands when forming the balls or the rice will stick to your hands.

yum yum, rice's always good^^
I was really intimidated by this recipe-and I still am, haha. But I'm gonna try it this week-No, I'm gonna master it!
Oh, and I'm one of your recipe testers! Love from me to you :o)
We're not huge fans of olives. Do you have any suggestions for alternative ingredients that might work and still give a yummy overall flavor?
Hi Mad Joy,
Any stuffing in the middle will work. Simply putting an umeboshi (Japanese plum) would be flavorful and authentic. Even kimchi would work.
If you don't have access to an Asian foods store, any veggies that are chopped finely will work well in the middle of these rice balls.
You cook one cup of rice with 2 spoons of vinegar?

Hope this helps.
only vinegar not water?

Good luck!
Do I have to use sushi rice or would any other short grain rice work?
Hi Kaelen Bennet,
Sushi rice is best if you want it to stick together, but other short grain rice will do. You may have trouble getting them into a round shape that doesn't crumble.
