I just tried this recently and enjoyed it, although I've been told Jackfruit tastes a bit like pork when cooked. I don't see how. I would have preferred a bit more instruction on how to cook the Jackfruit for this dish overall.
Thanks for the comment. The jackfruit we've found easiest to find is brined in a can and pre-chopped into pieces. There's nothing to it except to drain the liquid and toss it in an oiled pan. It's super easy and can be seasoned any way you like. We definitely suggest you give it a try and let us know how it goes.

Yum! If only jackfruit was not super expensive where I live. TVS what would you swap for the jackfruit? Tempeh or tofu or something else entirely?

We think your ideas of tempeh and tofu would both work great. Seitan would also work. You could even replace it with your favorite veggies.
