Okay so this is the first instance in my looking for quick vegan recipes online where I actually had everything on hand. I added Daiya mozzarella. You guys are amazingggg. I will buy your book in a heartbeat.
I made this for dinner tonight and it was super delish! You guys make it easy for a vegan to cook easy, cheap, and fast for one person. I was looking for a website like this for a long time! I will buy your book the second it come out! I can't wait for it. Thanks for making my life easy.
Oh making the recipes a little more searchable would be great. Even if that doesn't happen, I'll be using your site a lot! Thanks!
Om nom nom. I sauteed the mushrooms with some onions, garlic, and a green heirloom tomato, and substituted the soup and the salsa for cannellini beans and trader joes brushetta in a jar. Yummy!
I don't have a microwave and prefer fresh food to canned, and I just made this the old school way. Baked potatoes in the oven, cooked brown lentils on the stove with bay leaf, sauteed onions and mushrooms with garlic and mixed it all together and let it simmer for some minutes.... mmmmmm so good! Of course, this (and all the recipes on the site) taste better if you prepare a certain herb beforehand :)

I just made this! very yum. Did without the mushrooms and added sautéed bell pepper instead. super good! and easy enough
